Poaka Culatello is made from Poaka free range, heritage breed, acorn and sweet chestnut finished pork leg/ham. It is a specific cut of pork from the ham, and similar to prosciutto but Culatello has a richer and more intense flavour. We then dry cure it in a simple rub of garlic and black pepper, once cured, the coppa is hung and matured for several months which intensifies the sweet nutty flavour of the pork. Slice it as thin as you can and enjoy on a platter, on its own or get creative and add to a salad, pizza topping.
