Guanciale is made from the jowls (cheeks) of the pig. We dry cure the jowls in our own cure, then carefully smoke them using native manuka wood smoke. Guanciale is used in many famous Italian cooking recipes as it is very rich and adds incredible depth of flavour. Sold whole (approx 500g) or sliced (200g) pack.
