Poaka Genoa, beautifully crafted, simply delicious! Poaka Genoa Salami has a strong garlic note. Containing just our best free range pork, organic garlic, organic black pepper and organic New Zealand Merlot Wine. Traditionally fermented and air dried at low temperature for up to 3 months. This creates amazing mouth feel and an intense salami flavor. Matured to a very firm texture and can be sliced paper thin. Poaka only use natural salami casings which allows natural penicillium mould to colonize the salami surface. This contributes to the incredibly smooth flavour and makes an authentic looking salami.
Whole salami weigh a minimum of 700g. However, due to the varying nature of the natural casings we use, you may get more!

Poaka’s salami’s are shelf stable (they don’t require refrigeration) and can be safely stored at room temperature. However to maintain top product quality, we recommend keeping your salami in the fridge, or a suitable cool and dark place. Before you eat your salami, remove from the fridge, slice as thinly as you can and allow the sliced salami to come up to room temperature. This barings out the maximum flavour for your enjoyment.
